Quick and Easy Mashed Potato Recipe

Most mashed potato recipes use butter and cream, but I made my own spiced version with a paste from dried red chilies, tomatoes, coriander, garlic, and onion. It has heat, a little sweetness from the tomatoes, and a golden curry-like coating. Done in about 25 to 30 minutes, and it goes well with rice or flatbread.

Ingredients

  • 500 g potatoes
  • 2 medium tomatoes
  • 2 tbsp coriander seeds
  • 2 tsp ground coriander
  • 8 dried red chilies
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 5 to 6 garlic cloves
  • 1- inch piece of ginger
  • 1 medium onion
  • 70 g oil about 5 tablespoons
  • 1 tsp salt
  • Fresh cilantro for garnish

Method

Boil the Potatoes First:
  1. Wash the potatoes without peeling them and put them in a pot of water on high flame.
  2. Boil for 15 to 20 minutes until a knife goes in easily and the potato doesn't cling when you pull it back out.
  3. Drain, then peel and mash roughly in the same pot or a separate bowl. You don't need them completely smooth.
Make the Spice Paste While the Potatoes Cook:
  1. Add the tomatoes, coriander seeds, ground coriander, dried red chilies, turmeric, cumin seeds, garlic, ginger, and onion to a blender and blend into a smooth paste.
  2. Heat 70g oil in a pan on medium-high heat, add the paste, and cook while stirring often for 8 to 10 minutes until the raw smell is gone, the paste darkens, and oil starts to separate.
  3. Add the salt at this stage so the base is seasoned before the potatoes go in.
Combine and Finish:
  1. Add the mashed potatoes to the pot with the spice paste and stir so the paste works through evenly.
  2. Pour in about half a cup of water and keep stirring on medium heat until it's absorbed and everything comes together into a thick, flowing consistency.
  3. Take off heat, scatter fresh chopped cilantro on top, and serve.

Notes

Start with half a cup of water when combining and only add more if you need it. How much depends on how dry the mash is and how thick you want the final dish.
