Ingredients
Method
Grind the Masala and Soak:
- Blend onions, dried red chilies, coriander seeds, garlic, and ginger into a thick, smooth paste.
- Wash black gram and red lentils together and leave soaking in water while the meat cooks.
- Wash rice and soak separately for 20 minutes.
Pressure Cook the Meat (4 Whistles):
- Heat 100g oil in a pressure cooker on medium flame.
- Add buffalo meat, all whole spices, turmeric, salt, and ground masala all at once.
- Stir so the masala coats the meat evenly, then close the lid and cook on medium for 4 whistles.
- Let pressure release naturally, then open the lid.
- Cook uncovered on medium heat, stirring, until all liquid evaporates and oil separates at the sides. Do not skip this step.
Pressure Cook the Black Gram (7 Whistles):
- Drain soaked lentils and transfer to a second pressure cooker.
- Add 1.5 liters water, salt, turmeric, and chopped green chilies. Stir once and close the lid.
- Cook on medium heat for 7 whistles. Let pressure release naturally.
- Open and mash the lentils with a hand masher until no whole grains remain. This step is required.
Cook the Rice:
- Heat 70g mustard oil in a wide pot on medium flame.
- Add cumin seeds, then immediately add 1.2 liters water and bring to a boil.
- Add soaked and drained rice, stir once, cover, and cook on medium until all water is absorbed.
Combine and Finish:
- Add mashed lentils to the pot with the cooked meat and stir together on medium heat.
- Let it come to one full boil, then take off the heat.
- Add garam masala, stir through, and scatter fresh coriander on top.
- Serve over rice with raw sliced onion on the side.
Notes
Mash the black gram thoroughly after pressure cooking. Unmashed black gram stays grainy and will not blend into the meat.
