Avocado and Orange Milk Popsicle with Cashew

Milk heated with sugar, cooled, then mixed with crushed cashews, avocado, and orange juice and frozen into a popsicle. Creamy and thick from the avocado, with the orange keeping it from being too rich.

Ingredients

  • 50 g milk
  • 1/2 tsp sugar
  • 2 to 3 cashews finely crushed
  • 1 tbsp avocado flesh scooped out
  • 1 orange segment juice squeezed in, membranes discarded

Method

Heat the Milk with Sugar:
  1. Pour milk into a small pot, add sugar, and heat on low flame, stirring once or twice, until sugar dissolves and milk is hot.
  2. Take off heat and set aside to cool fully to room temperature before adding anything else.
Crush the Cashews:
  1. While milk cools, crush cashews with a pestle as finely as possible so they distribute evenly through the popsicle.
Mix the Popsicle:
  1. Once milk is fully cooled, stir in crushed cashews.
  2. Add avocado flesh and mix well until it fully breaks down into the milk. The mixture will thicken and get richer as the avocado blends in.
  3. Squeeze juice from the orange segment into the mixture, discarding the membrane and pulp. Stir to combine.
  4. Taste before pouring. It should be a little less sweet than you want, because it tastes sweeter once frozen.
Freeze:
  1. Pour into popsicle mold, leaving a small gap at the top for expansion.
  2. Insert stick, seal the mold if it has a lid, and place in the freezer.
  3. Freeze for at least 6 hours.
  4. To unmold, dip the mold in a bowl of water for 30 to 40 seconds and give a gentle shake before pulling the popsicle out.

Notes

Let the milk cool completely before adding avocado. Adding it to warm milk changes the texture.
